Chapter 2 pag 280 - What's for dinner? Sunday edition

Grilled Tuna steak marinated in fat free Italian dressing (I grill mine until it's super done - no cool pink center for me!!!!) - only ate half of it - very filling.

4 roasted radishes (the food network said that this would make them A-MA-ZING! . . . not so sure they were all that, but they were different . . . I'd do it again)

1 cup Asian Veggie Medley (Byrd's eye steamer bag)

1 cup whole grain Santa Fe rice

and for dessert. . . not pictured, a cup of fresh pineapple.  It was super sweet and delicious!

What did you have for dinner?

    We had pulled chicken sandwhiches, macaroni and cheese, green beans, cole slaw, and cottage cheese...

  2. Looks tasty! What seasoning did you use on the radishes? I remember eating them raw as a kid and hating them. I'd love to find a new way to prepare them so I can actually like them.

    Oh, and I really enjoy the Bird's Eye line of frozen veggies, especially the steamfresh ones. They make a very convenient work lunch for me. The Asian medley is one of their best.

  3. Yum-O! Sure beats my dinner of Lucky Charms ;)

    I'm really intrigued by the idea of roasted radishes. I just learned to like them in the past year but the spiciness can be a smidge overwhelming at times. I'm going to have to try them this new way!
